- 1 cup fine sooji
- 2 cups water
- 1/2 cup mango puree
- to taste Salt
- 3-4 tbsp jaggery powder
- 1 tbsp ghee
- 1 tsp ghee for greesing mould
- 1 tsp ghee for top brushing
- 1/2-1 tsp Pitha spice powder
- Handful cashew and kishmish
- Handful coconut pieces
- as per need Few coconut pieces (patiya) for top decoration

- 1 tbsp grated ginger
- 7-9 black peppercorns
- 1 tsp fennel seeds
- 2-3 cardamoms
- 1-2 cloves
- 1 bay leaf
- as required Dry roast and powder it
Steps to make to make Mango sooji podo pitha
- Place a kadhai,put water in it and heat. Add salt and pitha spice powder.
- Add mango puree, mix and cook in slow flame till boiling comes.
- Now add jaggery powder and mix. Add ghee too. Ghee gives a nice taste. Moreover when the ghee is homemade.
- Let it be on slow flame, add cashews and kishmish. Add small pieces of coconut.
- Let it cook and come to boil. Check the seasonings. You can increase the amount of pitha powder as per your taste. Now add sooji and stir continuously to avoid any lumps.
- Cook till water is absorbed. A thick mixture is ready. We call it "sooji jantuni". Put the mixture in a greased mould. If you are using silicon mould also, grease it with ghee for colouration and shine of the pitha.
- Level it up and flatten nicely. Decorate with thin slices of coconut. We call it "coconut patiya". Put some cashewnuts also on top. Engrave the coconut and cashews.
- Brush some ghee on top. Bake in a preheated oven at 180 degrees for 25 minutes with both heating rods on. Check after 25 minutes. If required bake for 5 minutes more. Then with top rod on bake for 5 minutes for top colouration. Baking time may differ from oven to oven. MANGO FLAVOURED SOOJI PIDO PITHA IS READY.. LET IT COOL.
