  9. 1/4 Cup Fresh Mangoes: Chopped- Garnish

Instructions to make to make Mango Basundi

  1. Boil the milk along with some green cardamom powder & then, post one boil- Reduce the flame to the low...keep it cooking for another 10-15 mins time until it thickens a bit & reduces a little too in its original quantity
  2. At this point: Add in, half of the measured the condensed milk aforesaid & keep stirring gently yet continuously so that to avoid sticking to the bottom of the pan
  3. Once done: Turn off the flame & allow it to cool down substantially a bit...before mixing our prepared AamRas into it- to avoid curdling by any chance (the milk should be warm but not at all hot)
  4. In the interim: Keep the mango purée ready & handy to be transformed into the AamRas by adding the rest of the condensed milk to it & cooking it over the low flame until it changes its colour a bit, thickens & reduces in its initial quantity
  5. Add in some more milk (separately, about 2 tbsps) to the blender jar & shake it well & pour it into the pan wherein we’re preparing our Aamras at the moment...
  6. Gently, keep on stirring continuously and wait until the water into the mango purée is completely absorbed & it turns outwit be thicker & creamier & smoother & has a nice shine on its texture....
  7. This requires some patience, perseverance & tenacity for sure & can’t be hurriedly finished in order to hasten the entire process...Refer to the pics down below
  8. Mix everything well together until nicely combined and well blended & incorporated... Transfer it to a separate bowl or directly to the serving platters- Wherein, it need be served....
  9. Garnish it your way & transfer it into your choicest serving bowls/tumblers/platters, etc....Add in some extra mango pieces to it as its decadent toppings over everything that’s been used in it, already.....AND.....
